Known as “Sashimi of the Mountains," kuzukiri is a type of transparent noodle made from the root of the kudzu plant, a climbing vine which grows native in Japan. The roots go through a process of being repeatedly crushed, soaked, and squeezed to extract the pure snow-white starch. As the number of foragers and harvesting areas dwindle, high-quality kudzu powder is a precious ingredient, making these kuzukiri noodles not only unique, but luxurious and versatile.
