To make this Shiitake & Ago Dashi Osuimono, Matsuoka Shiitake combines their earthy shiitake mushrooms with other umami-rich Japanese ingredients such as bonito, konbu and ago (a regional flying fish). The resulting soup is clean, crisp and full of flavor.
