RECIPE: Salmon and Rakkyo Chirashi Zushi

Chirashi Zushi, meaning “scattered sushi”, is a traditional Hinamatsuri (also known as Girls' Day or the Doll's Festival) food. Featuring a base of seasoned rice topped with fish, such as our Soy Sauce Simmered Salmon, and colorful toppings, like snap peas and cherry tomatoes, this dish is the perfect way to celebrate the girls in your life!

  1. While the rice is still warm, season with the Sweet Vinegar Pickled Rakkyo (Japanese Scallion) pickling liquid and a sprinkle of salt. Gently combine using a rice paddle or large flat rubber spatula with a slicing and turning motion. 

  2. In a small bowl, flake the Soy Sauce Simmered salmon using a fork. Set aside. 

  3. To serve, divide the seasoned rice between two bowls and top with the flaked salmon, pickled rakkyo, sliced snap peas, and quartered cherry tomatoes. Garnish with golden sesame seeds and enjoy!
