RECIPE: Hōtō Udon Hot Pot
This hōtō udon hot pot is a local specialty of Yamanashi Prefecture and the perfect comfort dish. Hōtō udon noodles add a doughy and chewy texture while the soup is rich in umami and flavor. Try either of the soups for a different taste experience!
Serves: 1
Ingredients:
- 150g kabocha (pumpkin) (cut into chunks)
- 50g carrot (cut into chunks)
- ½ negi (spring onion) (cut diagonally)
- 50g shimeji mushroom (or your favorite mushroom) (break apart by hand)
- 170g Hōtō Udon noodles (~½ package)
Soup 1
- 1 packet Organic Walnut Sauce
- 1 packet Organic Miso & Walnut Sauce
- 1 Tbsp soy sauce*
- 300ml water
Soup 2
- 1 Tbsp Miso*
- 50ml mentsuyu* (twice concentrated)
- 300ml water
Instructions:
- Mix all of either of the soup ingredients in a pan over medium heat. Add the vegetables (kabocha, carrots, negi and mushrooms) and cook until tender.
- Add the Hōtō Udon noodles. Cook for another minute and serve.
- Repeat with the other soup ingredients for a different taste experience!
