RECIPE: Dashi Scallops Takikomi Gohan (Mixed Rice)
Takikomi gohan (lit. cooked with rice) refers to a rice dish seasoned with Japanese flavors and cooked with other ingredients such as vegetables, mushrooms, meats, and seafood. This takikomi gohan includes succulent scallops from Hokkaido with a fresh, seafood flavor that is further enhanced by scallop dashi.

Ingredients:
- 8-9 dried hokkaido scallops*
- 300ml water
- 2 Japanese cups/1.5 US cups uncooked rice (300g)
- 20g negi (spring onion) (chopped)
- 2 Tbsp mirin*
- 1 tsp salt*
- 1 tsp soy sauce*
- 8g ginger (julienne) optional topping
Instructions:
- Put the dried scallops in a bowl, pour 300ml of water into the bowl and refrigerate overnight.
- Wash the uncooked rice, drain well and put in your rice cooker pot. Pour in all the liquid (dashi) from the soaked scallops and soak the rice for 30 mins to 1 hr.
- Add the mirin, salt and soy sauce and pour in water as per your rice cooker directions.
- Mix lightly to dissolve the seasonings. Flake the scallops on top of the rice along with the negi and ginger (if using) and cook as per usual.
- When cooked, stir from the bottom to mix and enjoy!
