RECIPE: Amazake (Sweet Fermented Rice Drink) Tofu Ice Cream
Perfect for those seeking a guilt-free but indulgent summer dessert, this inventive ice cream is made with just a few simple ingredients. Silken tofu lends a smooth, creamy texture while amazake adds subtle sweetness and tang to this dairy-free, no-churn ice cream.

75g (~3 oz) silken tofu

75ml (⅓ cup) Amazake (Sweet Fermented Rice Drink)

1 Tbsp lemon juice

Pinch of salt
Instructions:

Double wrap the silken tofu in paper towels and place in a microwave-safe dish. Heat uncovered for 1½ min at 600W. Carefully press the paper towels against the tofu and then unwrap.

Add the microwaved silken tofu, Amazake, lemon juice, and a pinch of salt to a blender. Blend until smooth and creamy.

Pour into a container and cover. Freeze for 2 hrs. Stir with a spoon to redistribute ice crystals and reincorporate air for a smoother texture. Smooth the surface back into an even layer, cover, and freeze for another 2 hrs. Repeat until fully frozen.

Let soften at room temperature for about 5 mins and mix thoroughly before serving.
