RECIPE:Kan Koji Fried Chicken
Packed with added umami flavor thanks to the use of Kan Koji Paste, these bite-sized pieces of fried chicken have a crispy golden exterior while remaining tender and juicy.

Ingredients:
- 200g (½ lb) chicken thigh
- 1 Tbsp Kan Koji Paste (Savory Salt Miso Paste)
- 1 tsp minced garlic
- 1 tsp minced ginger
- Potato starch (as needed)
- Frying oil (as needed)
Dipping Sauce (Optional)
- 1 tsp Kan Koji Paste (Savory Salt Miso Paste)
- 2 Tbsp vinegar*
- Chopped green onion (to taste)
Instructions:
- Gently pat chicken thighs with paper towel to remove excess moisture and cut into bite-sized pieces. Add to a resealable plastic bag with Kan Koji Paste, minced garlic, and minced ginger. Massage into the chicken pieces, remove air from the bag, seal well, and refrigerate overnight.
- Remove the marinated chicken from the bag and evenly coat pieces with potato starch.
- Heat frying oil in a pan over medium heat. Cook chicken pieces for 3 mins. Remove from oil and set aside for 3-4 mins to continue cooking with the residual heat.
- Return chicken to the hot oil and cook for 30-40 sec or until cooked through and golden brown.
- For a quick and easy dipping sauce, combine Kan Koji Paste, vinegar, and chopped green onion in a small bowl and enjoy alongside your fried chicken!
