RECIPE:Tuna & Avocado Shiso Tartare

Easy to make yet elevated, this eye-catching appetizer combines sweet, buttery tuna with rich avocado and mozzarella cheese. A touch of shiso olive oil and lemon brightens the palate creating a luxurious dish. 

Servings: 8

Ingredients:

  • 200g (7oz) sushi grade tuna
  • 1 avocado (~100g)
  • 1 Tbsp lemon juice
  • 2 Tbsp Shiso (Japanese Basil) Olive Oil Sauce
  • 2 tsp mayonnaise
  • 30g (1oz) mozzarella cheese, diced
  • Lemon, thinly sliced rounds
  • Fresh coriander/ cilantro (to taste)
  • Salt and pepper (to taste)

Instructions:

  1. Dice the tuna and avocado into 5mm (¼ inch) cubes.
  2. Combine lemon juice, Shiso Olive Oil Sauce, and mayonnaise in a large bowl to create a sauce. Season with salt and pepper to taste.
  3. Add diced tuna, avocado, and mozzarella cheese to the bowl and mix to evenly coat. 
  4. Place a 3cm diameter ring mold the plate and evenly pack with about ⅛ of the tuna mixture. Remove the ring mold and repeat with the remaining mixture. 
  5. Garnish with thinly sliced lemon and sprigs of fresh coriander/cilantro.
