Amazake (Sweet Fermented Rice Drink) Light Pickles (Asazuke)
A staple in Japanese cuisine, pickles are served alongside almost every meal. This simple recipe uses amazake (sweet fermented rice drink) and just a few ingredients. Easily adaptable, it can also be made with any of your favorite in-season vegetables!

Ingredients:

400-500g (2-3 cups chopped) vegetables (cucumber, carrot, radish etc.)

60ml (¼ cup) Amazake (Sweet Fermented Rice Drink)

60ml (¼ cup) water

2 Tbsp vinegar*

7.5-8g (~ 1 ½ tsp)salt

1 tsp sugar
Instructions:

Cut the vegetables into bite-sized pieces and place in a plastic bag or storage container.

In a bowl, whisk together the Amazake, water, vinegar, salt, and sugar until the sugar and salt have dissolved. Pour over the chopped vegetables and let marinate in the fridge for at least 2 hours.
