In keeping with tradition, this vegetable soup known as "kenchinjiru" features root vegetables. Smooth tofu together with the crunchy veggies create a pleasing texture. The ingredients are stir-fried with sesame oil, and then slowly simmered in an umami-rich dashi (stock) to create a rich, flavorful soup

Suggested Uses: Pour the contents into a bowl, add 160ml of boiling water and stir well. It will be ready in about 1 minute. You can also combine one package with 150g of uncooked rice and a pinch of salt and cook with water in your rice cooker to make Japanese Mixed Rice ("takikomi gohan"). This soup is easily portable to bring for lunch.
Substitutions: Try this soup in place of any warm soup you plan to serve. For example, in the fall or winter, it would be a wonderful soup to use in place of a butternut squash soup or a minestrone soup.
