The perfect combination of two of Japan’s most beloved foods: soba (buckwheat) and matcha. Made using high-quality flour, these noodles are hand-pulled until extremely fine and then aged to activate the gluten. This gives them a luxuriously smooth and shiny texture. The premium-quality matcha used in the dough is cultivated in the remote Southern Alps of Japan, 600 meters above sea level, in Shizuoka Prefecture. This is the highest altitude at which tea can be harvested, resulting in an enhanced color, aroma, and quality.
