芝麻油是日本厨房的隐藏瑰宝之一。它独特的坚果风味用途广泛,从炒牛蒡等口感浓郁的蔬菜,到为焯过的菠菜增添清香,都能用到。150多年来,岩井芝麻油一直沿用传统工艺生产芝麻油。他们精心烘焙芝麻,然后进行两次压榨。第一次压榨得到的是最优质的芝麻油,称为“一番榨”(ichiban shibori),第二次压榨则提取剩余的油。最后,将油过滤以去除杂质。最终得到的芝麻油色泽浓郁,清澈透明,带有坚果和焦糖的香甜口感。
