自1945年以来,小山制万一直沿用祖父的秘方制作乌冬面。这种独特的乌冬面以小麦粉和五种国产谷物为原料,并加入少许天然海盐。每种谷物都拥有独特的风味,造就了风味、口感和色彩各异的面条。将这些谷物与小麦粉混合需要精湛的技艺,而且虽然耗时是普通乌冬面的三到四倍,但面条是自然风干的。最终呈现出的乌冬面口感细腻顺滑,品质卓越。
