With a silky smooth texture and nutty flavor, gomadofu, or sesame tofu, is a cherished soy-free dish originating from Buddhist cuisine. This gomadofu has been lovingly created in the tradition of the monks living in the Buddhist pilgrimage site Mt. Koya in Wakayama prefecture. Using only sesame seeds and a starch from the kudzu plant, a climbing vine native to Japan, this Mt. Koya gomadofu is as delicious as it is nourishing. And unlike other recipes, this gomadofu doesn't melt when baked!
