Drawing inspiration from spicy Korean kimchi, this chewy Japanese “kimuchi” is less spicy, yet just as flavorful, with hints of chili, salty sweetness. Using a special drying technique, this shelf-stable kimuchi is dried at ultra-low temperatures to maintain its nutrients, taste, and aroma.


Size: 30g
Storage: Refrigerate after opening. Can also be stored at room temperature.
Ingredients: Chinese cabbage (domestic), starch syrup, sugar, daikon radish, garlic, salt, red chili powder

Originally when I bought a few packages I'd been wondering what all I would do with it. It's very much luck a kimchi jerky if you try it straight out of the bag. Which, I'm curious how a kimchi fruit leather variant would be made similarly. But the big win here was being able to use it for kimchi bagels. Yes, bagels. The flavor profile is a huge win in the baked goods section! You have to chop it a little more finely, but it works like a charm. When mixed in, the kimchi rehydrates a bit more with the dough as the dough rests. Sky's the limit with this gem.
