RECIPE: Ume (Japanese Plum) Teriyaki Chicken
This recipe uses one pan making it a quick and easy meal. Slightly sweet teriyaki sauce pairs perfectly with the salty tang of pickled plums giving the chicken a unique flavor. Neri ume helps the sauce come together in a snap!

Ingredients:
- 1 chicken breast (~260g)
- 1 Tbsp potato starch
- 1 Tbsp oil
- Pinch of salt
Ume teriyaki sauce:
Instructions:
- Cut chicken breast in half lengthwise, then into 1 cm wide pieces. Rub thoroughly with a pinch of salt then with potato starch.
- Heat the oil in the pan over medium heat. Add the chicken pieces and cook until browned on both sides, about 3 mins.
- Add the ume teriyaki sauce ingredients to the pan and stir fry with the chicken until the sauce thickens.
- Serve on a plate or on top of rice as a donburi (rice bowl) and enjoy!
