RECIPE: Gluten-Free Homemade Okonomiyaki (Savory Cabbage Pancake)

Enjoy a classic Japanese comfort food at home with this homemade guilt-free okonomiyaki. Made with rice flour, cabbage, and pork belly, it comes together quickly and is sure to become a family favorite!

Ingredients:

100g (¾ cup) Gluten-Free Okonomiyaki (Savory Pancake) Mix

100ml (~½ cup) water
-
1 egg
-
150g (~¼ head) cabbage, shredded

100g (3.5 oz) sliced pork belly

2 cloves of garlic, minced
Additional Optional Add-Ins:

Red pickled ginger*

Shredded cheese

Sliced green onions
Toppings:

Mayonnaise

Okonomiyaki sauce (can substitute with ketchup and Worcestershire sauce mixed 1:1 ratio)

Bonito flakes*

Aonori (dried green seaweed flakes)
Instructions:

In a large bowl, combine egg, water, and Gluten-Free Okonomiyaki (Savory Pancake) Mix. Stir to combine using chopsticks or a whisk.

Add the shredded cabbage, minced garlic and pork belly, as well as any additional add-ins, to the prepared batter and mix well.

Heat a hot plate/ griddle to 400 ℉/ 200℃. Alternatively, add oil to a frying pan and heat over medium-high heat. Spread the okonomiyaki batter into a circle and cook until the surface of the pancake turns golden brown.

Flip and cook the other side of the pancake until golden brown. Spread with okonomiyaki sauce and serve with a drizzle of mayonnaise and a sprinkle of bonito flakes and aonori if desired.
