RECIPE: Dashi-Style Omurice (Rice Omelet)

Omurice, a combination of the words omelet and rice, is the ultimate Japanese comfort food. It typically consists of ketchup flavored rice covered by a silky smooth, yet fluffy omelet. This dashi-style version has a subtler flavor from the dashi soup base and plain rice, and is topped with light and airy boiled eggs.

Ingredients

  • 200g cooked rice
  • 1 package Kyushu Dashi Hot Pot Soup
  • 150ml water
  • 2 tsp potato starch + a bit of water
  • 2 eggs
  • Dash of salt

Instructions 

  1. Gentle press the cooked rice into a bowl and flip onto a plate with the rounded side up. 
  2. In a pot, dilute the Kyushu Dashi Hot Pot Soup in 150ml of water and bring to a boil. Dissolve the potato starch in a bit of water then add to the soup to thicken. 
  3. Separately, crack the eggs into a bowl and beat with salt. Pour into the pot and gently stir with a ladle until the eggs have cooked. Strain out the eggs and serve on top of the rice.
