Yuba (tofu skins) is a simple yet wholesome food made by warming soybean milk and gently skimming off the tofu skin as it forms on top. While it tastes somewhat similar to tofu, yuba has a special creamy texture from its delicate, thin layers and a slightly sweet - almost buttery - taste. Yuba is a valuable source of protein that has become an essential element of Shōjin Ryōri (traditional Buddhist temple cuisine).

Suggested Uses: Cut into strips, yuba makes a fabulous addition to soups, stir-fries and dumplings. The sheets can also be soaked whole in room-temperature water for about 3 minutes and then rolled around julienned vegetables, shrimp and herbs to make spring rolls.
Substitutions: Use yuba as a meat substitute, particularly in stir-fries or braised dishes. You can also use the sheets of yuba as a protein-rich substitute for dumpling wrappers. Cut into strips, yuba can mimic flat noodles and be used as a substitute in some noodle dishes such as soups or stir-fries
