In Japan, tsukemono (pickled things) such as this shiso- and ume-infused ginger are enjoyed alongside nearly every meal. Thin slices of organic ginger are pickled with aromatic shiso leaves, ume vinegar, and rice vinegar, creating a vibrant plum-hued pickle with gentle spice, a refreshing minty lift, and a subtle floral note.
