Adzuki (sweet red beans), known for their mellow sweetness and earthy, nutty flavor, have been called the chocolate of Japan and appear in many traditional and contemporary sweets. These bite-sized biscuits are made using tsubuan, a sweeter, smoother adzuki paste, combined with traditional tastes of Kanazawa, including rice syrup from the oldest confectionary shop in Kanazawa and brown rice amazake (sweet fermented rice drink) . The rice syrup gives the biscuits a gentle sweetness while the brown rice amazake adds floral, fruity undertones.
