Kanten, known as agar in English, is a natural type of vegan gelatin with a firm texture. Flavorless on its own, it's used as a base in many Japanese desserts including puddings, yokan and these delightful jellies. Here it's combined with fragrant and flavorful citrus yuzu peels with a touch of sugar to showcase yuzu's signature sweet yet tart flavor.
