This unique vinegar, once only available to the customers of an unassuming sushi restaurant in shopping street near Kobe in Hyogo Prefecture, is unlike any vinegar you're had before! Named after an ancient area on Shikoku Island famous for bonito (skipjack tuna) Tosa vinegar is infused with katsuobushi (dried, fermented, smoked bonito fish) and konbu (kelp.) This imparts a smoky, umami-rich flavor that balances out the sharpness of the vinegar.

Suggested Uses: Toss as is with fresh or grilled vegetables, or combine with a mild-tasting oil to create a light and refreshing dressing. Toss it with grilled eggplant, asparagus and cherry tomatoes then top with grated ginger and katsuobushi*. You can also use it to make pickles with cucumber or other vegetables or serve it with sashimi grade fish.
Substitutions: Use in place of rice wine, white, or even balsamic vinegar in your favorite dishes.
