Katsuo koubou maintains the nostalgic taste of katsuobushi by carefully cooling their steamed katsuobushi in a refrigerator so it can be shaved in a dry state and packed immediately, ensuring the flavor doesn't deteriorate. By using their custom shaving machine, they are able to minimize the friction and heat from the blades, lessening the damage caused to the katsuobushi while shaving. The result is a rich flavor reminiscent of when katsuobushi was shaved at home.
