Highlights
- Essential element of traditional Buddhist temple cuisine
- Delicate with a creamy texture
- Rich and nutty, highlighting the natural flavor of soybeans
Yuba (tofu skins) is a simple yet wholesome food made by warming soybean milk and gently skimming off the tofu skin as it forms on top. While it tastes somewhat similar to tofu, yuba has a special creamy texture from its delicate, thin layers and a slightly sweet - almost buttery - taste. Yuba is a valuable source of protein that has become an essential element of Shōjin Ryōri (traditional Buddhist temple cuisine).
