With a taste like Gouda cheese, this smoky and fragrant island tofu, known as shimadofu, has a firm, smooth texture. It's made by slowly aging tofu with koji (a a flavor-enhancing fermentation powerhouse) and smoking it with cherry wood chips. It's a local favorite from the southern tropical islands of Okinawa!
