Koshin shiitake are larger and flatter than the thicker donko shiitake as they are harvested after the mushroom cap has bloomed. This shape gives them a shorter rehydration time, making them easier to use in cooking. The 24-hour drying process also gives these shiitakes a more concentrated umami flavor than raw shiitakes.
