These dried shiitake mushrooms are perfect for cooking as well as making earthy, savory vegan dashi. Simply rehydrating them in water as directed yields succulent shiitake suited for soups and stir-fries and the flavorful liquid leftover adds umami to all your favorite dishes. Koshin shiitake are larger and flatter than the thicker donko shiitake as they are harvested after the mushroom cap has bloomed. This shape gives them a shorter rehydration time, making them easier to use in cooking. The 24-hour drying process also gives these shiitakes a more concentrated umami flavor than raw shiitakes.

Suggested Uses: Gently wash the dried shiitake and place in a zippered storage bag or sealed container with enough cold water to cover. Remove excess air, close tightly, and place in the fridge for about 10 hrs. When the mushrooms are rehydrated the dashi is ready to be used. You can also remove the stems from the shiitake and slice the caps to use in your favorite dishes. Try adding sliced shiitake to soups, stir-fries, or steamed fish.
Substitutions: Use the rehydrated shiitake in place of other mushrooms in your favorite dishes. Use the vegan shiitake dashi in place of vegetable stock in recipes.
