Produced through a combination of traditional methods and modern machinery, this Shonai Fu is made by kneading a wheat flour dough and washing it in water to separate the proteins from the starch. The wheat gluten is then grilled over an open flame to create a fragrant, crispy exterior before being steamed, pressed into sheets, and dried again. The finished Shonai Fu adds a toasted, breadlike texture and flavor to soups, salads, noodles and more.
