Goma (sesame seeds) find their way into many Japanese dishes with their subtle nutty, buttery flavor. There are three main types of sesame seeds: white, black and golden, with golden being the most rare given the small number of producing regions. They have the highest oil content of the three, lending to a richer taste and aroma.
Sesame seeds are generally roasted first in one of three ways: far-infrared roasting, direct flame roasting, or micro-roasting. Kingoma Honpo uses the far-infrared roasting method as this technique causes the seed’s oil and fat to mix with the protein, resulting in a marbled sesame seed with maximal flavor. This method requires a craftsman's skill as weak roasted seeds lack fragrance, while over-roasted seeds are bitter.
Suggested uses: Sprinkle on any dish to add a nutty, buttery flavor. The seeds can also be ground (we suggest using a mortar and pestle) to make gomashio (sesame salt) by mixing 12 parts ground roasted sesame seeds with 1 part sea salt and use in place of salt.
