Okinawa, Japan's southernmost tropical islands, has a culture, cuisine and way of life that is distinct from the rest of Japan. Its white sandy beaches, warm tropical weather and mouthwatering regional specialties make it the perfect destination to embrace “nuchi gusui” (meaning life’s medicine, it represents all the heartwarming things in life including nourishing food, people’s kindness and motherly love).
One of these regional specialties is kokuto, a nutritious Okinawan black sugar made from local island sugarcane.
Unlike regular brown sugar, which is a combination of molasses and refined white sugar, kokuto is made by slowly cooking pure sugarcane juice which draws out it rich, licorice flavor while preserving its natural vitamins and minerals.
Kokuto is used in many Okinawan sweets, including this local treat known as chinbin (rolled Okinawan crepe). The kokuto adds a natural licorice sweetness while the mochi (glutinous rice) flour provides a delightful chewy texture. This chinbin mix can also be used to make various baked goods including madeleines (recipe included).
