Kanzuri is a traditional spicy yet slightly sweet fermented chili paste that has been made exclusively in Myoko City in the snowy prefecture of Niigata for generations. This artisanal paste is so special as only the Kanzuri family company can manufacture and sell it (it’s even difficult to find in Japan outside of Niigata!).

SHIKUWASA JUICE (卓上 青切りシークヮーサー)

Ingredients:Shikuwasa (hirami lemon)

This 100% pure juice is made from flat, green citrus fruits known as shikuwasa (hirami lemon). Found in Okinawa, Japan’s southernmost tropical islands, the sour fruits (their name means “eat the sourness”) are prized by locals for their refreshing tart flavor.

These homemade, crunchy kirazu (soybean pulp) crackers are made from 100% domestic soybeans and local flour from Aichi Prefecture. The crackers have a slight sweetness which is balanced with a touch of salt and are gently fried in non-GMO rapeseed oil.

Hayashi rice (sometimes called hashed beef) is a popular Western-style comfort food which typically consists of tender beef, onions and mushrooms cooked in a demi-glace sauce and served with rice. This special hayashi sauce is entirely vegan with a deep, rich flavor that comes from eight different vegetables combined with aromatic spices and finished with a special domestic red wine. 

Ingredients:Burdock (domestic), carrot (domestic), hijiki seaweed (domestic), lotus root (domestic), shiitake mushroom (domestic)

This comfort food is something TabiEats' mothers used to make. It includes five special ingredients from Japan that can easily be stir fried then simmered in a sweet sauce to make a traditional kinpira dish using TabiEats' recipe.

Ingredients:Yugao fruit (Tochigi)

You may recognize kanpyo as the bow wrapped around the konbu (kelp) roll found in the traditional Japanese New Years meal known as Osechi Ryori, or as one of the fillings of futomaki sushi rolls. Extremely versatile, kanpyo is made from peeling and drying the yugao or fukube fruit (similar to a calabash gourd). This unique kanpyo is unbleached and has been peeled into strings then dried in the midsummer sun.
