RECIPE: Nori Tsukudani Paste

RECIPE: Nori Paste

Tsukudani is a traditional Japanese condiment, in which nori (roasted seaweed) is simmered down into a salty, sweet, umami silken paste and typically dolloped on a bowl of steaming rice. 



  1. Tear the nori into small pieces and soak in water for five minutes.
  2. Loosen with chopsticks and cook over medium heat with sugar and soy sauce until the liquid is almost gone and it turns into a paste. 
  3. Remove from heat and serve scooped atop bowl of rice. Can also be served chilled.
