RECIPE: Mozuku (Okinawan Seaweed) Pancake
Found only in the seas surrounding Okinawa, Japan’s southernmost tropical islands, mozuku is a type of brown seaweed that is known for its slimy texture and delicious health benefits. Rich in minerals and fucoidan, mozuku is said to contribute to the Okinawans’ longevity (the archipelago is home to some of the longest living people on earth!).
Try this easy to make recipe to enjoy the local flavors of this Okinawan speciality.
- 10g miso
- 1tbsp sesame oil
- 1tbsp mirin
- 1tbsp sake
- 30-50g flour
- Pinch of salt
- 1 egg
- 200g raw mozuku (be careful not to use salted mozuku)
- Oil for frying
- Mix the miso, sesame oil, mirin, sake and salt in a bowl and set aside.
- In a large bowl, whisk the egg, then add the seasonings from step 1 and the flour.
- Stir in the mozuku.
- Pour the mixture into an oiled frying pan on medium heat and cook firm and slightly crispy.
