RECIPE: Shogayaki (Chili Oil Ginger Pork)

 

Pork Shogayaki (shoga means ginger and yaki means grill) is a popular dish in Japan of thinly sliced pork cooked in ginger, soy sauce, sake and mirin. The addition of chili oil adds a spicy accent and extra flavor. 

 

Servings: 1

Ingredients:

  • 240g pork loin (thinly sliced)
  • Salt and black pepper to taste
  • Potato starch (sprinkling)
  • 2 tsp sesame oil
  • 1 tsp butter 

Sauce:

  • 1 piece of ginger (grated) (15g)
  • 1 1/2 tbsp soy sauce*
  • 1 tbsp sake
  • 1 tbsp mirin
  • 1/2 tsp chili oil

Instructions

  1. Poke holes in each piece of pork with a fork to prevent it from shrinking. 
  2. Sprinkle with salt and black pepper and potato starch (conservatively). This will help the sauce to stick to the pork. 
  3. In a separate bowl, mix all the ingredients for the sauce.
  4. Heat the sesame oil in a pan on medium heat and cook each side of the pork until golden brown. 
  5. Add the sauce from step 3 to coat the pork. 
  6. Just before removing from the pan, add butter and coat the pork evenly. This adds extra flavor and richness to the dish, but be sure not to add too much. Serve hot and enjoy!
